June Foraging Class & Picnic

Start your foraging journey with Chef Amelie!

Sunday June 23rd, 10 am - 1 pm

Hoyt Arboretum, Portland, OR (meet in the parking lot)

$39 per person, or two people for $70

Join us as we snip fresh nettles, pick edible flowers and celebrate spring! Chef Amelie will share the secrets of stinging nettles garnered from her summers in the French countryside.

You will learn:

  • How to safely harvest and process fresh nettles

  • Learn to identify wild salad greens

  • Pick edible forest flowers

  • Learn the powerful medicinal properties of local plants you thought were just weeds!

Next we’ll enjoy a luxurious picnic of featuring wild foods!!

Please wear long sleeves, pants and garden shoes. Please bring a notebook and pen, scissors/garden clippers, garden gloves, and rain gear.

All students will leave with wild herb samples, recipes, new friends and a happy heart.

Turn this local terror into terroir…

Smith and Bybee Wetlands Natural Area, 5300 N Marine Dr, Portland (meet in the parking lot)

$39 per person, or two people for $70

Join us as we snip fresh nettles and celebrate spring! Chef Amelie will share the secrets of stinging nettles garnered from her summers in the French countryside.

You will learn:

  • How to safely harvest and process fresh nettles.

  • How to make nettle powder to supplement soups, breads and more.

  • Why nettles are far superior to industrially farmed greens like kale and spinach

  • The medicinal mythology of stinging nettles

Next we’ll jaunt down the road to Kelley Point Park for a luxurious picnic of Creamy Nettle Dip w/ Spring Vegetable Crudite, French Nettle Soup w Meatballs and Crusty Bread.

Please wear long sleeves, pants and garden shoes. Please bring scissors/garden clippers, garden gloves, and rain gear.
