Green Strawberry Pickles

These are so unexpected on a charcuterie platter!

Recipe:

  • 1 pint green strawberries, hulled and halved

Place strawberries in a clean jar. In a small saucepan, bring to a simmer:

  • 1 cup water

  • 1/2 c champagne vinegar

  • 3 tbsp sugar

  • 2 1/2 tsp salt

  • 1/4 tsp coriander seeds

  • 1/4 tsp black peppercorns

Pour over strawberries and lid the jar. Let pickle for at least 24 hours. Store in fridge.
