Nettle Tzatziki

INGREDIENTS (3 cups):

  • 1/2  English cucumber, partially peeled (striped) and sliced

  • 1 tsp kosher salt, divided

  • 4 garlic cloves, peeled, finely grated or minced (you can use less if you prefer)

  • 1 tsp white vinegar

  • 1 tbsp Extra Virgin Olive Oil

  • 2 cups Greek yogurt

  • 1/4 tsp ground white pepper

  • 1-2 tbsp nettle powder OR 1/2 cup blanched and pureed fresh nettle leaves


  1. Add 1 tsp salt to cuke, blitz, and drain cucumber. Blitz garlic before adding everything together.

  2. Serve with Snap Peas, Pita Bread, Crackers, Olives, Dried Apricots and Strawberries, etc.

  3. Tastes even better the next day!
